There is nothing better than a lazy morning when you don’t have to rush out anywhere and can enjoy breakfast in bed. On those days I love taking my time to breathe, meditate and enjoy the early sunshine or the peaceful low-hanging clouds.
When I’m starting the day slowly, I like my breakfast sweet an slow too. Here’s one of my favourite recipies for a healthy, heart-warming morning meal.
- Millet - 1/3 cup
- Apple - 1
- Dried Cranberries - 3 tbsp
- Cinnamon - 1 tsp
- Honey - 2 tsp
- Oats - 2 tbsp
- Rinse the millet well (at least 3 or 4 times) and boil on medium heat.
- Add diced apple, cranberries, sweetener of your choice (I like to use xylitol to limi tmy sugar intake) and cinnamon.
- Boil for about 15 min.
- Dish it out and mix in the oats. You can add a bit more if you have excessive moisture in your millet.
